GILL'S ROTI
IS A MEDITERRANEAN DISH CAN BE MADE WITH BEEF OR CHICKEN
CURRIED BEEF ROTI FILLING (Chicken can be used instead)
1lb beef (clod for stew)
1/2lb potatoes
1 large onion
1 clove of garlic
2 tsp soy sauce
1/2 tsp pepper
1/2 tsp salt
2 tbsp curry
2 tbsp vegetable oil
Clean beef and remove fat. Cut into small pieces. Peel and cut up potatoes, onion and garlic. Mix beef with seasonings, 1 tbsp of the curry and soy sauce. Leave to marinate. Put oil on saucepan and add other tbsp of curry. Add meat and fry. Add 1/2 to 1 cup water and cook over gentle heat until meat is tender and gravy thick. Add more curry if desired.
There are 2 ways to eat a roti. You can either put the roti filling in the middle of the skin and fold the sides over, or just tear the skin into pieces and dip in meat. This last one is what we call "buss up shop". Either way is delicious.
