8 TABLESPOONS BUTTER, DIVIDED
4 TABLESPOONS FLOUR
1 1/2 CUPS MILK
2 CUPS CHEDDAR CHEESE, SHREDDED
1 CUP SWISS CHEESE, SHREDDED
1/2 TEASPOON SALT
1/4 TEASPOON PEPPER
2 CUPS GARLIC AND BUTTER CROUTONS, CRUSHED
DIRECTIONS
COOK MACARONI UNTIL DONE BUT STILL FIRM. DRAIN AND
AND POUR INTO A GREASED 1 1/2 - QUART BAKING DISH SET ASIDE
IN A SAUCEPAN MELT 4 TABLESPOONS BUTTER. ONCE MELTED, GRADUALLY
ADD FLOUR AND STIR OVER MEDIUM HEAT UNTIL ITS SMOOTH AND LIGHTLY
BROWNED
ADD MILK TO THE FLOUR-BUTTER MIXTURE AND BRING TO A BOIL.
COOK 2 MINUTES STIRRING CONSTANTLY
REDUCE HEAT AND ADD CHEESE, SALT AND PEPPER
ONCE ITS SMOOTH, POUR OVER MACARONI. STIR AROUND
A LITTLE TO MAKE SURE THAT CHEESE MIXTURE COATS ALL
THE MACARONI
SPRINKLE CRUSHED CROUTONS ON TOP AND POUR
4 TABLESPOONS OF MELTED BUTTER EVENLY OVER THE
CROUTONS
BAKE UNCOVERED AT 375 DEGREES FOR 30 MINUTES.
